Ingredients
Serves 43 zucchini grated
1 cob of corn (peel the outside leaves and slice off the kernels then microwave for a few seconds)
2 tbsp milk with a squeeze of lemon in it (or buttermilk)
1 cup self-raising flour
½ cup Meredith Dairy Goat's Cheese (with extra for serving) (or substitute parmesan, finely grated OR or feta crumbled)
1 grated onion
1 garlic clove crushed
3 eggs whisked
Oil for frying
Method
1. Trim the ends from zucchini. Coarsely grate the zucchini. Place in a colander and squeeze out as much excess moisture as possible.
2. Mix the flour, egg and milk and then add to the zucchini along with the corn, onion, garlic and cheese.
3. Heat a good amount of olive oil in a pan. Don't be stingy! Then fry in batches of 4.
