Ingredients

Serves 12 (Makes 12 cupcakes)

1 cup sugar
½ cup brown sugar
140gr butter
¾ cup sweet potato puree
6 egg whites
1½ cups plain flour
1tsp vanilla extract
1 tsp each ground cloves, nutmeg & cinnamon
2 tsp baking powder
1tsp salt
1 cup choc chips

Method

Beat egg whites until stiff.
Cream butter and sugar until light and fluffy. Add remaining ingredients except egg whites and choc chips. Stir until combined. Add egg whites, stirring gently. Finally add choc chips.
Use an ice cream scoop to put even amounts into cupcake cases. Bake at 180°C for approximately 20 minutes.
Cool and ice with whipped chocolate ganache or decorate with fondant.
