Ingredients

Serves 4

For strawberries:
65g sugar
50ml Irish whiskey
100ml strawberry coulis
500g strawberries


 

For cheesecake
1 vanilla bean, seeds scraped
100g quark
125g caster sugar
125ml Greek yoghurt
150g mascarpone
250ml cream

Method

For strawberries
Cook sugar to a deep caramel, add whiskey and coulis and cook until deep red in colour and viscous. Toss in strawberries and heat until warm. Serve immediately with a scoop of ‘cheesecake’

For Vanilla Cheesecake
Beat vanilla, quark and sugar until smooth. Add yoghurt, mascarpone and cream and beat until combined. Hang in muslin overnight before using.


Tips:
• Quark is a baker’s cheese of European origin. It is a simple curd cheese that can be used for sweet and savoury applications. It is lower in fat than cream cheese which can be substituted if quark is not available
• Warming the strawberries ‘unlocks’ their scent
• Hanging the ‘cheesecake’ overnight drains  moisture from it allowing it to be scooped into neat quenelles
