Ingredients
Serves 4 (makes 12-16 dumplings)
200gr green prawns, chopped
50gr pork fat, chopped
1 shallot, chopped
1 tbsp freshly grated ginger
1 tbsp light soy sauce
1 tbsp Chinese rice wine
1 tsp toasted sesame oil
1 tsp fish sauce
1 pinch brown sugar
1 pinch of cornflour
Extra fresh ginger, peeled, julienned and deep fried for garnish.
Method
Finely chop prawns, pork fat and shallot. Combine well with other ingredients.
Spoon a ball of the mixture into the centre of the wonton wrapper. Fold in half and mould the wonton wrapper around the filling. Pinch together and pleat if desired. Trim edges into a round shape if you like. Steam for 6-8 minutes.
Serve topped with fried ginger as a garnish.
