Great for the kids lunch box and quick and easy to make, add any ingredients you like to make it more interesting but remember kids don’t like green stuff!
1pkt filo pastry
250g cheddar cheese
250g feta cheese
½ cup kalamata olives, pitted
4 eggs
500ml cream
Pinch salt
100g butter
Aged Goats Cheese Pies
This is an adult version of the above that is fantastic as a pre dinner nibble or a light lunch with a few salad leaves and possibly a walnut dressing. If you can find an aged goats cheese, firm with a rind, they are a little dryer as they age and are easier to bake with in this recipe. A French cheese, such as “Bucheron” or “Montrachet” will work well. There are a couple of Australian alternatives - Milawa for example have an ashed version.
2 sheets puff pastry - frozen is fine
300g aged goats cheese - log
2 sprigs thyme
1 egg
Method
Mini Cheese Pies for Kids
Brush the pastry sheets lightly with butter. Layer together and cut into a squares slightly bigger than the fan or muffin tin moulds.
Mix the egg, cream and salt and add the grated cheddar and crumbled feta.
Bake at 180°C until golden for approximately 15 minutes.
Allow to cool for 5 minutes to cool and de-mould.
Aged Goats Cheese Pies
Cut the goats cheese into cylinders. Cut the puff pastry into squares twice the size of the goats cheese.
Egg-wash the puff and place the cheese into the centre of the square.
Crimp the edges of the pastry up the sides of the cheese and put a sprig of thyme on the top.
Bake at 200°C until golden for approximately 15 minutes. Remove from the oven and serve with a nice chutney or alternately some baby salad leaves and crisp bacon.
