Ingredients
Serves 4-61 ½ cups boiling water
70gr dates, chopped
1 ¾ tspns bi-carb soda
¾ cup (170gr) softened butter
1 cup sugar
2 eggs
2 cups plain flour
½ tspn salt
½ cup chocolate chips
½ cup sugar
½ cup broken walnuts
Method
Preheat the oven to 175ºC. Lightly grease a 28cm x 18cm lamington tin.
Pour boiling water over the dates and stir in 1 tspn of the bi-carb soda. Allow to cool.
Cream the butter and sugar. Beat in the eggs then remaining bi-carb soda, sifted flour and salt. Fold in the date mixture.
Pour into the prepared tin and sprinkle over the chocolate chips, sugar and walnuts. Bake for 35-45 minutes. Serve hot with whipped cream as a dessert, or cold as a cake.
This cake is very easy and no icing is required.
