Ingredients
Serves 4-6For poached fruit
1 litre water
300grms sugar
500ml red wine
1 Corella pear
Small bunch grapes
1 Lady William apple
1 nashi
1 peach
2 plums
1 cinnamon stick
1 clove
1 star anise
Zabaione
3 egg yolks
100mls White wine
100mls marsala
60g caster sugar
Method
Add the sugar to the water and reduce by half over a medium heat. At this point add the red wine and bring back to boil. Add the star anise, cinnamon and clove and simmer for five minutes. Add the seasonal fruits (skin off and seeded) and gently poach in the syrup until the fruit is cooked.
To make the Zabaione:
Place all of the ingredients into a stainless steel bowl and blend together. Place the bowl over a pot of hot water on the stove (a water bath) and use a soft metal whisk to blend together. Continue whisking until light and fluffy and the mixture is warm throughout. Serve with poached fruit.
