Ingredients

Serves 12-14

400g mixed dried fruit
2 litres vanilla ice cream (Pauls is good)
½ cup rum
⅓ cup brandy
40g red glace cherries
30g green glace cherries
10g grated peel

Berry Sauce
1 pkt (box) frozen mixed berries
¼ cup castor sugar
¼ cup brandy (or to taste)


 

Method

Soak dried fruit in the brandy. Slice glace cherries. Soak the peel in the rum. Mix all together through ice-cream without melting it.
Tip: May add crumbled pieces of real Christmas pudding or sticky date pudding leftovers if wanted.
Line inside of bowl (metal is best) with plastic wrap. Place ice-cream mixture into bowl. Freeze well before serving with berry sauce.
 
To Make Berry Sauce:
Slowly heat frozen berry mix to soften in a pan. Add castor sugar and brandy to taste. Pour into jug and allow mixture to cool.
Add sliced mint.
 
To serve:
 Place bowl upturned onto large serving plate. Place warm, damp towel over bottom of bowl to release ice cream.
Peel off plastic wrap.
Drizzle berry mixture over ice cream cake, bring to the table and serve.
 
(The Christmas pudding may be made and served in individual cups if preferred)
