Ingredients
Serves 4-61 cup water
½ cup sugar
2 cups cranberry juice
2 cups watermelon, deseeded, chopped and blitzed
Method
Heat sugar and water over medium heat until sugar is dissolved. Cool.
When cool, add cranberry juice and watermelon pulp. Stir well to combine.
Pour into a shallow metal tray and freeze until just firm (about 1.5 - 2 hours). Break up using a raking action with a fork. Refreeze for a further 1 hour. Continue the last 2 steps until the mixture is frozen.
Break up and spoon into bowls or glasses. Serve immediately. Garnish with finely shredded mint leaves or watermelon balls.
