Ingredients

Serves 12 (Makes 24)

65gr butter, cold and cubed
¼ cup icing sugar
½ cup plain flour
2 ½ tsp cornflour
1 tbsp cocoa
1 egg yolk

Chocolate Ganache
1 cup cream
1 cup dark chocolate chips

Method

Place all ingredients into a food processor. Pulse until mixture comes together in a ball.

Roll into a 2cm diameter log. Wrap in plastic wrap and place in the fridge for 30 minutes.

Cut into 1cm rounds. Place on tray and cook in oven at 180°C for 7-8 minutes -watching carefully so they don't burn.

When cool, sandwich together with chocolate ganache, dust with cocoa and serve.
