Ingredients

Serves 2

1 whole crayfish, approx 800 grams
5 cloves garlic, peeled and chopped
150 grams unsalted butter
¼ cup chopped parsley
Salt and pepper

Method

To make the garlic butter, remove the butter from the fridge and bring to room temperature
Beat butter till white and fluffy. Add garlic, parsley salt and pepper, and mix till combined.

Pre heat oven to 200°C.

Cut crayfish in half and remove the entrails.
Season with salt and pepper.

Rub on the garlic butter and put in oven (refrigerate any leftover butter).
When crayfish is cooked, approximately 10 minutes, remove from oven and serve.
