Ingredients

200g minced duck thigh
5g sesame oil
7g ginger smashed
7g garlic smashed
85g Spanish onion sliced
12g sun-dried chili
10g roasted and crushed peanuts
10g shaoxing (Chinese wine)
10g light soy
5g white sugar
5g black vinegar
22g coriander stem cut into batons

Method


Stir fry the duck mince till just cooked and remove.

Stir fry the ginger and garlic till fragrant, then add the Spanish onion, sun-dried chili and peanuts.

Deglaze with the shaoxing, and then add soy, sugar, and black vinegar.

Return the duck to the wok and add the coriander stem, combine well and serve.
