Ingredients
Serves 4-6Marinate together:
1kg chicken thigh fillets
4 garlic cloves, thinly sliced
4 bay leaves
¼ cup black olives, pitted
¼ cup prunes, chopped
¼ cup capers
¼ cup olive oil
¼ cup red wine vinegar
1 Shnook (large splash) of white wine
¼ cup brown sugar
¼ cup white wine
To serve:
A handful of steamed beans
Crusty Olive bread
Method
Marinate chicken with main ingredients for 4 hours or overnight.
Place in a baking dish and sprinkle ¼ cup brown sugar. Pour over ¼ cup white wine.
Cover with a lid and bake at 150ºC for 1½ hours.
Serve with steamed beans and olive bread.
