Ingredients

Serves 4-6

Fry 3 tablespoons Green Curry Paste for 1 minute.
Add:

* Chilli (optional)
* 2 tablespoons fish sauce
* 1 teaspoon brown sugar
* 300 ml light coconut cream or milk
* Lemongrass/galagal/kaffir lime leaf (all optional according to taste)

 

Method

Let simmer for about 5 minutes.

Add 300 grams finely sliced chicken fillet and 200 grams vegetables of choice.

Let simmer for a further 5 minutes or until chicken is cooked.

Garnish with basil or coriander and serve with steamed rice.
