Ingredients

Serves 6

1 Chinese barbeque duck, meat removed from the bones and shredded
150ml Hoi Sin sauce
150ml sweet chilli sauce
Juice of 1 lime
18 wonton wrappers, brushed with egg wash, sprinkled with sesame seeds and deep-fried
1 nashi pear
½ bag Asian salad greens
Sesame seeds (black and cream, toasted) for garnish

Method

Mix the two sauces and lime juice together and set aside. Peel the nashi and cut into julienne strips.

Lay out 6 fried wonton wrappers on serving plates. Begin layering:  shredded duck, nashi, Asian greens and then a drizzle of sauce. Top with another wonton wrapper and repeat process. Top with a wonton wrapper. 

Sprinkle with extra sesame seeds, drizzle a little of the sauce around the plate and serve immediately.


Notes: This is an easy, quick and impressive entrée style dish. You could also serve it as part of a number of courses in an Asian style dinner.
