Ingredients

Serves 6

200gr smoked salmon portion (not sliced)
400gr fresh tagliatelle
Juice of 1 lemon
Drizzle of extra virgin olive oil
150gr sour cream
1 egg yolk
1bunch chives, chopped
Salt & cracked pepper

Method

Cut the salmon into lardoons.

Bring a pot of water to boil and cook the pasta.

Heat the olive oil in a frying pan and slightly sauté the salmon.

Add the lemon juice, then the sour cream.

Strain the pasta and combine with the sauce and while it’s still hot mix in the yolk and the chopped chives.

Season with salt and cracked pepper.
