Ingredients

Serves 4

1 small pack dried porcini mushrooms, soaked in 1 cup boiling water
70gr unsalted butter
1 large red onion, thinly sliced
4 garlic cloves, finely chopped
300gr fresh wild mushrooms (use a combination of your favourites), stems removed if tough, sliced
One bunch of fresh parsley stems, tied together with string (use the leaves for another dish)
2 cups dry white wine
4 cups cream
1 head radicchio, halved and shredded
Salt & pepper to taste
250gr parmesan cheese, freshly grated
¼ tsp nutmeg, freshly grated
2 tbsp fresh oregano, finely chopped
500gr gnocchi, cooked for half the time on the packet instructions
600gr fresh ricotta cheese
Green salad to serve

Method

Preheat oven to 180°C.

Remove the dried porcini from the soaking water and strain the liquid through a cheesecloth (or similar) lined sieve into a bowl. Chop porcini roughly.

Melt 30gr of butter in a medium pan over medium heat. Add onion, garlic, half the mushrooms and parsley stems. Cook, stirring until softened (about 5 minutes).

Add the wine and reserved porcini water, bring to the boil and simmer over medium-high heat until liquid is reduced by about a third. Add cream and return to the boil. Simmer until thickened, about 15 minutes. Remove parsley stems.

Heat remaining butter in a medium pan over medium heat. Add remaining mushrooms and chopped porcini. Cook, stirring until golden. Add radicchio and cook until just wilted. Season with salt and pepper. Combine both pans of mushrooms and add half of the parmesan cheese, nutmeg and oregano.

Combine cooked gnocchi and mushroom mix. In an ovenproof serving dish (23cm x 33cm or thereabouts), spread half of the gnocchi/mushroom mixture.  Dollop half of the ricotta over the gnocchi. Top with remaining gnocchi and dollop with remaining ricotta. Sprinkle with remaining parmesan cheese and bake until golden and heated through, about 40 minutes.

Serve with a green salad.

Note:  Buying gnocchi makes this dish much easier, but it is very easy to make your own. It just takes a little time.
