Ingredients

Serves 4-6

6 chicken breasts, seasoned with sea salt & pepper
300gr assorted mushrooms
1 tbsp fresh thyme, chopped
¾ cup parmesan cheese, grated
30 sheets filo pastry
200gr butter, melted (or spray with olive oil spray if desired)

Method

Preheat oven to 200°C.

Heat a non stick fry pan till hot and spray lightly with olive oil spray.  Pan-fry chicken breasts until golden (approx 2 minutes on each side).  Remove from pan.  Add mushrooms and thyme to same pan and cook until slightly softened.  Add cheese and stir until combined.

Layer 5 sheets of filo, brushing each layer with melted butter or spraying with olive oil.  Place a chicken breast on each stack of pastry and top with mushroom mix.  Fold in each side and roll up to completely enclose chicken.

Place on a baking paper lined tray and bake for 20 mins. 

Serve with green salad or mixed steamed green vegies.
