Ingredients
Serves 2500g eye fillet or topside
Dressing
1 tsp fish sauce
1 tsp of lime juice
Touch of chilli powder or more if you prefer it hot
Salad
1 spring onion (or to taste)
½ red onion (or to taste)
Coriander (to taste)
Mint (to taste)
Kaffir lime leaf
To serve
1 tsp of glutinous rice (roasted)
2 cups of glutinous rice
1 cucumber
Lettuce leaves
Method
Grill or pan fry steak until cooked to taste.
Combine the dressing ingredients and set aside.
Slice the spring onions on the diagonal. Slice the red onion finely, and pick all the leaves off the stems of the herbs.
After meat has rested, to room temperature, slice finely across the grain.
To make the roasted rice, put it straight on to fry until golden, then grind to a course grind with a mortar and pestle.
Soak the rice for serving. It needs to soak for ten minutes in 200 mls of water. Cook in a rice cooker until tender, and serve on the side.
Combine the meat and salad ingredients together with the dressing.
Cut the cucumber on the diagonal.
To serve place lettuce leaves on plate, pile with salad, sprinkle with sliced cucumber and ground rice.
