Ingredients
Serves 4-68 cardamom pods, seeds removed and finely ground OR 2 vanilla pods, split & scraped
350g white chocolate (good quality), chopped
300ml cream
50g unsalted butter
50g icing sugar
200g white chocolate (good quality), chopped, for coating
Method
Truffles are generally fairly easy to make, so they are a good one for kids to be involved in. White chocolate can be temperamental, it is best to take it slowly and not rush. This applies to both the melting and setting.
Heat the cream in a saucepan or microwave until just boiling. Remove from heat and add 350g chopped chocolate, butter and the powdered cardamom (or vanilla beans, if using instead). Stir until the mixture is completely smooth. Allow to cool slightly and then whip until mixture thickens slightly. Put into the fridge for 1-2 hours.
Using a teaspoon as a guide, roll even amounts of mixture into balls about the size of a cherry. Put back into the fridge for 20-30 minutes.
Melt the extra 200g of chocolate in a double saucepan or microwave. Sift the icing sugar into a separate shallow bowl. Roll the balls in the chocolate and set on a rack until almost set. Roll in icing sugar to finish.

7. No double dipping! Taste food with a clean spoon.
8. Safety - never try anything for the first time without mum or dad. Even if you need boiled water, check with an adult first.
