Ingredients

Serves 4-6

125g butter, softened
1 ¼ cups brown sugar, tightly packed
1 tsp pure vanilla extract
1 egg, lightly beaten
1 ½ cups plain flour
½ tsp baking powder
¾ cup choc chips
¾ cup rolled oats
Extra chocolate for decorating if desired

Method

Preheat oven to 180°C.

Cream butter and sugar until creamy and light.  Add vanilla and egg.  Stir in sifted flour, salt and baking powder until just combined. Stir through choc chips and rolled oats.

Place dessertspoons of mixture onto lined baking tray about 4-5 cms apart to allow room for spreading.  Cook for 15-20 minutes until golden.

Allow to cool on tray for 5 minutes before removing to a wire rack.

Drizzle melted chocolate over cookies if desired.
