Ingredients

Serves 5 plus: Makes 10 slices

3 ripe organic bananas, mashed
1 free range egg, lightly beaten
115g (½ cup) CSR Organic Sugar
⅓ cup buttermilk or organic milk
1 tablespoon butter, melted
225g (1½ cups) organic self-raising flour
37g (¼ cup) organic plain four
½ teaspoon baking powder
½ teaspoon ground cinnamon
¼ teaspoon ground ginger

Topping
1 tablespoon organic rolled oats
1 tablespoon CSR Organic sugar, extra

Method

Preheat oven to 180ºC conventional or 160ºC fan forced. Grease and line an 11cm x 25cm loaf pan with baking paper.

In a large bowl combine banana, egg, CSR Organic Sugar, buttermilk, butter and beat until well combined.

Sift flours, baking powder and spices in a separate bowl. Add the banana mixture to the dry ingredients and mix until just combined.  Pour into loaf pan.

Top with oats and extra sugar, bake for 55 minutes or until cooked when tested with a skewer. Serve warm, cut into thick slices or toasted until golden.

Note: If organic ingredients are not available, the recipe can still be made with non organic ingredients.
