Ingredients
Serves 4
500g spaghetti, cooked according to the directions on the packet and cooled
2 tablespoon olive oil
250g bacon, diced
1cup sliced mushrooms, optional
1 clove garlic, thinly sliced
250ml thickened cream
4 eggs, lightly beaten
2 tablespoons chopped chives
½ cup grated parmesan
Method
Heat the oil in a deep pan, add the bacon and fry until the bacon becomes brown and slightly crispy.
Add the mushrooms and cook until softened. Add the garlic and sauté for another 30 seconds.
Add the cream and bring to the boil.
Add the pasta and mix thoroughly. Season with salt and pepper.
Remove from the heat and stir in the beaten eggs and chopped chives.
Serve immediately topped with parmesan cheese.
