Ingredients
Serves 4-6200gr crab meat
½ cup breadcrumbs
1 bunch coriander
1 long red chilli (finely chopped)
3 green shallots (finely chopped)
2 kaffir lime leaves
1 lime (juice & rind)
1 beaten egg
1 tbsp extra virgin olive oil
Salt & pepper
Coriander Mayonnaise:
1 egg yolk
1 tbsp Dijon mustard
Salt & Pepper
250 ml grape seed oil
Chopped coriander to taste
Method
In a large bowl combine the crab meat, bread crumbs, shallots, chilli, 1 bunch of coriander (chopped), thinly sliced lime leaves, lime juice & rind, egg and salt & pepper.
Shape the crab mix in 4 burgers and fry them in a non-stick pan with olive oil until golden brown on each side.
For the coriander mayonnaise, blend the egg and oil and mustard until you have a smooth consistency. Add the coriander and a little pepper and salt to taste. Serve with the crab cakes.
Tip
If the crab mixture is too wet, add some breadcrumbs.
