Ingredients

50g thinly sliced Wagyu (beef fillet can be
used as substitute)

Or

60g thinly sliced fish, such as salmon,
mulloway (fresh scallops and oysters also
work well)

Or

Thinly sliced tofu, blanched asparagus and
tomato as a vegetarian version

New style oil:

90 ml olive oil
10 ml sesame oil

Mix together:

Yuzu soy
40 ml soy sauce
60 ml Yuzu juice

Garnishes:

Sprinkle of plump roasted sesame seeds
1 clove garlic finely minced to puree
1 small knob of ginger, cut to fine 3cm long batons
3-4 fine chives cut to 3cm long batons

Method

Lay the veg, fish or meat slices neatly on a serving plate and lightly rub each
slice with the garlic puree, lay a few batons of ginger and chive on each slice.

Heat the new style oil until it starts to smoke. Drizzle the Yuzu soy around the
veg, fish or meat, sprinkle with the sesame seeds. Then using a ladle, sear all by
pouring a little of the hot oil over.

It is now ready to serve.
