Ingredients
Serves 4
500g fresh Hokkien noodles
2 tablespoon peanut or vegetable oil
300g small green prawns, peeled and de-veined
2 eggs, lightly beaten
2 tablespoon soy sauce
1 tablespoon chilli sauce
½ teaspoon sugar
2 spring onions, finely sliced
100g bean sprouts
1 lime, quartered
Method
Place the noodles in a bowl and separate, cover with hot water and let stand for 5minutes. Drain well and set aside.
Heat a wok, then add the oil. Add the prawns and stir fry until pink in colour.
Add the eggs to the wok and fry then add the noodles and toss well until hot.
Pour in the sauces and sugar and mix well.
Finish with the spring onions and bean sprouts.
Serve with wedges of lime to squeeze over the top.
