Ingredients

Serves 12-15 cones


2 cups mixed dried fruit
4 tbsp brandy
1 tsp mixed spice
1 cup chocolate or toffee almonds, chopped roughly
½ cup dried cranberries (craisins)
½ cup pistachios, toasted
1 litre good quality vanilla ice-cream, softened slightly

For Decoration:
White chocolate melted and cut into star shapes
Silver/coloured cachous

 

 

Method

Soak dried fruit overnight (if possible) with brandy and spice.

In a large bowl, mix all ingredients until well combined.

Using large waffle cones lined with baking paper as a mould, fill with ice-cream mixture and freeze until firm.  This should make 12-15 cones, depending on size of the cones. Alternatively, these could be made into any shape mould or even one large one.

Decorate plates with white icing stars and sprinkle with silver cachous for decoration.
