Ingredients
Serves 4-6
Beef Burgers
400g lean beef mince
1 cup fresh breadcrumbs
1 egg
1 large onion, grated
½ cup fresh herbs (whatever you have in the garden or your favourites), finely chopped
¼ cup parsley, chopped
Salt & pepper, to taste
½ cup tomato relish or fruit chutney
Tofu Burgers
500gr firm tofu
1cm piece fresh ginger, grated
1 egg
2 tsp sesame oil
1 cup fresh breadcrumbs
Sesame seeds and Japanese breadcrumbs (panko) for coating
Asian Salad mix
Beetroot Salsa
2 medium size beetroots
Handful of rocket leaves, washed and roughly chopped
½ Spanish onion, finely chopped
¼ cup parsley, roughly chopped
lemon juice, a squeeze
Olive oil, a splash
Method
Beef Burgers
Combine all ingredients in a large bowl and mix really well. Your hands are best for this job as you really need to scrunch all the ingredients together so that they don't crumble.
Using a half cup measure as a guide, (this ensures they are all the same size), make the patties and refrigerate until ready to cook them.
Tofu Burgers
Combine all ingredients except sesame seeds and panko in a food processor and process until well combined. If the mixture seems too wet, add more fresh breadcrumbs. If too dry, add another egg or a splash of sweet chilli sauce. This consistency will depend on the brand of tofu.
Using a half cup measure as a guide, (this ensures they are all the same size), make the patties, coat in the seeds and panko and refrigerate until ready to cook them. Cook as for beef burgers.
Beetroot Salsa
This salsa can be made using either cooked or raw beetroots. If using raw, grate them coarsely, if using cooked beetroots, dice them quite finely.
Combine all ingredients and serve on top of the burger
To Serve
Bread - Rye or Wholegrain/seed bread would be the powerful way to go.
Turkish Pide
Toast the bread if you prefer and then top with a beef burger and a good blob of salsa.
For the tofu burger, spread your bread with sweet chilli sauce, top with Asian salad greens and the burger.
Notes
Burgers are a great meal for a crowd. You can set out separate plates with all the old favourite toppings, such as tomato slices, cheese, fried eggs, beetroot slices (if the salsa's a bit new wave), avocado etc.
