500g ricotta (drier variety if possible)
6 tablespoons almond meal
2 tablespoons castor sugar
¼ cup sultanas
4 egg yolks
1 teaspoon vanilla extract
Zest of one orange
Juice of one orange
Method
Pre-heat oven to 130ºC. Butter a baking dish or cake tin.
Mix all the ingredients in a bowl and pour into the prepared dish.
Place in the pre-heated oven and bake for 60-90 minutes or until the centre just sets.
When cooled dust with icing sugar or serve with orange sauce.
Orange Sauce
Ingredients
100g sugar
Juice of one orange
60ml Cointreau
1 tablespoon cornflour mixed with 1 tablespoon of cold water
Method
Place sugar in saucepan & make a dark caramel on medium heat.
Remove pan from heat & slowly add orange juice
Bring back to the boil
Add cornflour paste
Bring back to the boil & remove from heat
Cool before adding Cointreau
