Ingredients

Serves 4-6


750ml water
750ml coconut cream
10g sugar
2 lemon grass stalks, sliced thick
6 shallots
6 coriander roots
3 bird's eye chilli
120g galangal, sliced thick
5 kaffir lime leaf

60ml fish sauce
30ml lime juice
30ml soy sauce
300g chicken breast, sliced thinly
1 punnet cherry tomatoes
150g snow peas, sliced
1 punnet baby corn, chopped

 

Method


In a large pot, heat the water, coconut cream and all the ingredients down to the kaffir lime leaf. Simmer for 10 minutes.

Add the remaining ingredients and bring back to the boil. Turn the heat down and simmer for 5 minutes.

Serve with steamed rice on the side.
