6 Egg whites
250g Castor sugar
Dash Vanilla essence
Dash Vinegar
75ml Amaretto
10 Amoretti biscuits
150g Raspberries
250g Strawberries
150g Blackberries
150g Castor sugar
200g Mascarpone
200ml Cream
1 Vanilla pod
Method
Pre heat the oven to 130C
Whip the egg whites and sugar for 5 - 10 minutes until silky and forms stiff peaks
Pipe small meringues out onto grease proof paper and bake for 45mins until crisp in the outside and still soft in the centre.
Place half of the strawberries berries into a small pot and add the castor sugar bring to the boil and puree.
Whip the mascarpone and cream together with the vanilla pod and reserve.
Crush the biscuits a little and drizzle with the amoretti. Pipe a little cream into the bottom of a glass, spoon in some berries then more cream.
Add a layer of biscuits then repeat the process.
To finish pile a few meringues high onto the trifle - spoon and eat!
