Ingredients

Serves 4


1 x 850gm -1kg live lobster
4 quality sour dough burger buns

Relish:
1 mango- flesh large dice
ΒΌ bunch of coriander
1 very small chill de-seeded flesh only
 
To garnish:
50gms wild rocket.

 

 

Method


Blanch lobster tails in boiling, salted water for 6 minutes.
Refresh in ice water & split in half with a very sharp knife. Take out the flesh, season with salt and a drizzle of fresh butter.
Gently place on the barbeque and grill until golden brown on both sides.

While the lobster is cooking, take a stainless steel bowl and throw in chopped mango. Add chopped coriander and chilli. Stir in gently and put to one side.

Take the lobster flesh off the barbeque.

Toast the buns on the barbeque & butter.

Assemble the lobster burger and add the mango relish and a little fresh wild rocket then serve.
