Ingredients

Serves 4-6


Hedgehog
110gr butter
½ cup sugar
3 tbsp cocoa
1 egg
250gr Marie biscuits (½ crumbs, ½ big chunks)
Icing:
½ cup icing sugar, sifted
2 tbsp butter, softened
2 tsp cocoa
1tbsp hot water (plus a little extra if necessary)
Vanilla extract

Rocky Road
500g milk, white or dark chocolate - or use a mix of the three (use good quality chocolate - you WILL taste the difference)
100g Turkish delight
150g marshmallows (use the tiny ones, then you don´t have to chop them up)
50g pistachios (make sure they are unsalted)

 

Method


Hedgehog
Melt butter, sugar and cocoa together in the microwave in a large glass dish, stirring until melted and combined.  Cool slightly and then add beaten egg.  Add the Marie biscuits and press into a greased and lined lamington/slice tin. For the icing, cream butter until pale and soft and gradually add icing sugar.  Add hot water to cocoa until combined and add to icing sugar mixture.  Add vanilla to taste. 
 
Refrigerate until hard and then ice with chocolate icing.  Sprinkle with coconut and cut into fingers or squares.     Rocky Road
Grease and line an 11cm x 22cm slice tin or similarly sized container. If using all three chocolates, melt separately over gentle heat or in the microwave.  Dollop 1/3 of each into the tin and spread to meet, but don´t mix them.  Sprinkle over 1/2 of each of the toppings.  Repeat the chocolate layer and then the topping layer, finishing with a chocolate layer.  Refrigerate until set.  Cut into chunks or fingers.
