Ingredients

1 live lobster, about 1kg
½ cup butter
½ cup Irish whiskey
½ cup whipping cream
salt and pepper

 

Method


Place the lobster in the freezer for 3-4 hours to put it to sleep.

Cut in half, remove the meat and cut into large pieces. Drop the lobster shells in boiling water for 3 minutes to cook, remove and set aside to cool.

Melt the butter in a hot pan and when the butter foams toss the lobster meat in foaming butter for a few minutes until cooked.

Add the whiskey and when it has heated tilt the pan up to set light to it. Pour in the cream, heat through and season.

Serve in the half shells with steamed green beans.
