¼ cup butter
¼ cup sugar
¼ cup golden syrup
¼ cup plain flour
½ cup sliced almonds
2 punnets raspberries
100g marscapone cream
2 tablespoons icing sugar
200ml semi whipped cream
Method
Pre-heat oven to 160°C.
Combine butter sugar and syrup in a bowl. Add flour and mix well. Add almonds and combine.
Place a full rounded teaspoon of the mixture onto the silicone shapes, i.e. stars, hearts etc, and place silicone mat over oven tray.
Cook for 12 minutes or until golden brown. The tuille mixture should spread into the desired shape.
Remove from oven and allow to cool for a minutes before removing tuilles from silicone mat.
Meanwhile whisk the mascarpone and sugar together in a bowl and combine with semi whipped cream. Place one tuille on a plate and top gently with a layer of whisked mascarpone cream, add a few raspberries and top with another tuille to make sandwich! Add as many layers as you like or make mini sandwiches to share!
