Ingredients

Serves 6

For the meringue:
4 egg whites
1 cup caster sugar
1 tsp vinegar
1 tsp corn flour
1 tbsp rose syrup
1 table spoon rose water
¼ tsp vanilla bean extract
½ cup pistachio nuts, roughly blitzed in food processor

To assemble:
200ml whipped cream
2 pieces of Turkish Delight (chopped)
Fresh raspberries

Method

Put egg whites, sugar, vinegar, corn flour, rose and vanilla all into a mixing bowl and beat on high speed for 5 minutes. Mixture should look shiny and hold stiff peaks.
Fold in nuts.

Line a flat baking tray with baking paper and divide mixture into six individual meringues (shaped like nests).

Bake at 120°C for 40 minutes and allow to cool in oven. They should be crunchy on the outside and like marshmallow on the inside.

Top with whipped cream, Turkish delight and fresh raspberries.
