Ingredients

Serves 4

4 x white fish fillets– halibut or whiting.  Not cod
1 lemon - sliced
8 large basil leaves
1 carrot, chopped into matchsticks
1 red capsicum - matchsticked
1 red onion finely diced
8 green beans, matchsticked
Salt
Pepper
Parchment paper

Method

Place sheet of parchment (baking) paper on baking tray. Place down 2 basil leaves, then carrot matchsticks, capsicum and beans. Sprinkle with diced onion.
Place fish fillet on top, add salt & pepper and slice of lemon.
 
Wrap tightly into a bon bon style so that no steam can escape.
 
Repeat for each piece of fish.
 
Place all on baking tray and bake in hot oven 200˚C for approx 10minutes.
 
Remove from oven and serve in the paper (carefully slice open with scissors so steam can escape and you don't burn yourself).

Serve with mashed potato or green salad.
