Ingredients

Serves 6

1 brown onion, 1 cm dice
1 tablespoon thyme, chopped
2 bay leaves
2 cloves garlic, shaved
1 zucchini, 1 cm dice
2 carrots, 1 cm dice
2 sticks celery, 1 cm dice
100 ml extra virgin olive oil
Pinch saffron thread
5 tomatoes, diced
1lt fish stock
12 mussels de bearded and scrubbed
300 g white fish flesh
1 cup raw prawn meat roughly chopped
½ cup shredded parsley
Salt and pepper to taste

Method

1. Sauté onion in olive oil for 2 minutes.
2. Add bay leaves, garlic, thyme, carrot, celery, saffron cook for 3 minutes.
3. Add tomato and zucchini cook for further 2 minutes.
4. Add fish stock bring to the boil, skim then simmer for 20 minutes.
5. Add mussels, prawn meat, white fish simmer for 2 minutes.
6. Add parsley, and season with salt and pepper.
