Ingredients

Serves 4

300 ml thickened whipping cream
1 tbsp caster sugar
100g ready-made meringues
450g fresh strawberries
1 tbsp icing sugar, plus extra for dusting
50ml pomegranate liqueur (or your favourite liqueur)

Method

Traditionally Eton Mess is a mixture of meringue, cream and strawberries, folded together and spooned into a trifle dish. This is the easy way, where all the ingredients are assembled as is with almost no mixing!

Place the cream in a large mixing bowl, add the sugar and beat with an electric mixer until the cream is light and fluffy. Do not over beat.

Crumble the meringue into bite-size pieces.  

Place half of the strawberries into a food processer and blitz quickly with the liqueur and icing sugar. 

Chop the remaining strawberries roughly.

Into serving size glasses or dishes, place a layer of meringue, followed by a layer of strawberries, drizzle with strawberry puree and then dollop with cream. Repeat the layers. Finish with a scattering of strawberries and a drizzle of puree. Chill for about half an hour before serving.
Remove from the fridge, dust with icing sugar and serve. 

So easy and incredibly delicious!
