Ingredients
Serves 6 (Makes 12)1 ¼ cup cream
1 cup sugar
2 eggs
Dash of vanilla essence
2 cups self raising flour
Simple Icing:
2 tbsp soft softened butter
A few drops essence of choice
1 ½ cups icing sugar
Water
¼ cup cocoa (optional)
Method
Preheat oven to 180˚C.
Place cream and sugar in a large bowl and mix well with a wooden spoon or beaters (whatever the child wants to use.)
Add eggs and vanilla. Mix together.
Gradually add the self raising flour. Mix together well.
Line cupcake trays with patty cases and fill with 1 to 2 tablespoons of mixture. Experiment and see what happens with amounts!
Cook for approximately 15 to 20 minutes.
Ice with your favourite icing, decorate and enjoy! Or simply sprinkle icing sugar on top and gobble!
Simple icing
In a bowl place 2 tablespoons of soft unsalted butter. Mix in essence of your choice (vanilla, lemon, orange, strawberry etc.)
Add 1 ½ cups of icing sugar. Mix well. Add little bits of water, maybe half a teaspoon at a time, until it reaches the consistency you like.
Spread on cool cup cake. Decorate with your favourite toppings or lollies. Enjoy!
If you want chocolate icing, add about ¼ cup of cocoa. Add more if you want the icing to look darker in colour. Follow the same procedure as above.
