Ingredients

Serves Lots (or maybe 1 - if you don't share!)

2¾ cups of wholemeal self raising flour
2 cups rolled oats
250 g butter
1 cup brown sugar
1 cup castor sugar
2 tsp vanilla essence
2 eggs, cage free of course!
250 g of choc chips
Extra choc chunks (optional)

Method

1. First walk into the kitchen with a dying love of chocolate. Anything less, please consult another recipe.
2. Pre heat oven to 180°C.
3. Melt butter completely in a pot or microwave oven (don't use high setting unless you want to scrub out the flying bits of overheated butter everywhere - learnt that the hard way!).
4. Grab a massive mixing bowl and add both sugars and vanilla essence to bowl and stir.
5. Add melted butter to bowl and stir in. Then taste by dipping finger in - it's disgustingly good!
6. Add the 2 eggs and mix thoroughly.
7. Now add the flour and mix. You may want to add a cup at a time; otherwise it may look like a winter snow storm has hit your kitchen with flour everywhere! (Again, learnt the hard way).
8. Add the oats and mix through again.
9. Now the moment we have all been waiting for, the choc chips! Mix them through, and add the extra chunks if you so desire - you know you want to!
10. Once mixture is ready (everyone get your fingers out of there!), lightly roll some mixture in a ball, not too tight and add to oven pan. I recommend using baking paper on the pan. How much mixture you ask? Some - depends how big you like your heartburn, I mean cookies, or how much you like the person you're giving them too!
11. Once on the pan, add a chocolate chunk - lightly pressing down on top of the cookie. This will help know what kind of chocolate is in the cookie, and it looks sexy!12. Insert the trays into the oven and cook for, umm, that long! It's about 15 minutes, but you will constantly monitor them like they are your own children! Once lightly brown on top, leave them out to cool and enjoy.

If you're a guts like me, you'll want to consume instantly. Be aware chocolate is very hot out of an oven... You guessed it, learnt that the hard way too, but worth every blister!!!!
