Ingredients
Serves 42 tsp vegetable oil
2 tsp sesame oil
1 tbsp sweet chilli sauce
2 tbsp soy sauce
250 g chicken breast, skin removed and cut into strips
1 clove garlic, crushed
1 medium brown onion chopped
1 knob of ginger, grated
2 medium carrots thinly sliced
1 red capsicum, cut into strips
1 head of broccoli chopped into florets
125 g snow pea shoots ends and strings removed
Steamed rice to serve
Method
Heat vegetable oil in a wok or large pan and stir fry chicken until almost cooked. Remove from pan and set aside.
Add sesame oil and garlic, onion, ginger, carrots and capsicum to the wok and cook for 2 minutes. Add broccoli and stir fry and further 2 minutes.
Return chicken to the pan, add snow peas and cook for 2 minutes.
Stir in soy and chilli sauces.
Serve with steamed rice.
Tip: Cook rice in microwave by covering with an equal amount of water and cooking on high, uncovered, for 12 minutes.
