Ingredients

Serves 6

For chicken:
1 x roasting chicken
1 tbsp cumin seeds
1 tbsp coriander seeds
½ cup olive oil
1 tbsp paprika
1 tsp cayenne pepper
1 tsp salt or to taste


For guacamole:

2 avocados
1 red onion, finely diced
1 tomato, diced
1 bunch coriander, finely chopped
Juice of ½ lime


For tomato salsa:

½ red onion, finely diced
2 tomatoes, diced
1 bunch coriander
¼ cup olive oil


For chipotle mayonnaise

Some canned chipotle (to taste)
1 cup homemade mayonnaise


To serve:

Tasty cheese
Sour cream
Burrito wraps

Method

1. Toast cumin and coriander seeds and grind them in a mortar and pestle.
 Mix with olive oil, paprika, cayenne pepper and salt. Rub all over the chicken and roast for about an hour depending on the size of the chicken.

2. To make the guacamole, mash the avocados in a bowl, with 1 finely diced red onion, 1 diced tomato, finely chopped coriander and lime juice.

3. Make the tomato salsa, by combining finely diced red onion, tomato, coriander and olive oil.

4. Make the chipotle mayonnaise by combining chipotle from a can with freshly made mayonnaise.

5. Slice chicken and serve in burrito wraps with above accompaniments, cheese and sour cream.
