Ingredients
Serves 4-6Buffalo wings
1 kilo chicken wings
70g sweet paprika
50g onion powder
50g Cajun spice of choice
50g garlic powder
50g Vegeta
Also use a chicken rub seasoning if preferred
Salt to taste
1 cup cotton seed oil
Cotton seed oil for frying
Misty’s Chilli Con Carne Fries
500 grams beef mince
1 diced onion
100mls diced tomato with juice
Handful shredded carrot
¼ cup cumin powder
40mls basil dried or fresh is fine
40 mls Cajun seasoning
40 mls oregano
40 mls garlic powder or fresh garlic lightly sautéed
Salt to taste
¼ cup beef booster (or stock)
¼ cup sweet paprika
½ tsp ground chilli powder
5 litres water approx.
1 large tsp sweetened powder chocolate
½ cup masa flour well mixed with water into a paste until thick enough to pour but not watery
1 cup Turtle beans dried
1cup pinto beans dried
1 cup red kidney beans dried
1 cup cannellini beans dried
French fries to serve
Method
Buffalo wings
Cut the chicken wings in 3, toss the tip and check for hair and feathers.
Combine the cup of oil with the dry ingredients.
Place buffalo wings and oil mixture in a large plastic bag or bowl and leave in refrigerator overnight if possible or 2-5 hours.
Turn your deep fryer on with cotton seed oil and heat to 165°C.
Cook wings for about 7 minutes.
Once done, drain and then toss with Wing time buffalo sauce or Frank’s sauce (my personal preference is Wing time and it comes in 4or 5 different flavours.)
Serve with a Ranch or a Bleu Cheese Dressing, celery sticks and a nice spicy chilli sauce on the side, wet wipes, and a Dr Pepper to wash it all down with!
Misty’s Chilli Con Carne Fries
Wash beans and soak overnight. Next day drain old water. Place in a pot with fresh water. Boil beans uncovered for one hour, topping up water as needed so they are covered with water but do not cover with a lid.
Next day - In a large pot sauté beef mince with a little cotton seed oil and add onions. Once browned add fresh garlic.
When meat is almost all cooked add your dry mixture, and mix in well. Then take your diced tomatoes and juice and shredded carrots and dump into your bean pot along with your meat mixture.
Mix well. Cook uncovered for one hour. While it is bubbling along add your masa flour, slowly so you have no lumps. Stir often so you don’t burn the bottom. Taste and add salt, and more chilli powder as needed. Adjust to your taste buds.
Serve over French fries and top with cheese. Enjoy!
