Ahi Poke Recipe
For Tuna Mixture:
1.2 kg sushi grade tuna
1 ¼ sliced brown onions
½ bunch thin bias cut green onion
1/3 cup toasted sesame seeds
1/3 cups julienned fresno chillies
½ cup edamame or fresh peas
¼ mango diced
For Soy Garlic:
300g garlic cloves
1 cup rice wine vinegar
4 serrano chillies split and stemmed
2 cups sugar
2 ½ cups soy sauce
1 cup water
For Salsa Verde:
300g garlic cloves
2 cups canola oil
¼ brown onion
3 bird’s eye chillies
6 bunches cilantro
¼ cup toasted sesame seeds
¼ cup kosher salt
3/4 cups lime juice
3/4 cups orange juice
To serve
600g shallots, thinly sliced and fried in canola oil
250g sesame seeds toasted

LA County Lamb Chops
Serves 4-5
Kalbi Marinade Recipe:
1 cup soy sauce
½ bunch green onion
½ cup garlic
½ cup aji mirin
1 cup orange juice fresh
¼ cup sugar
½ cup sesame oil
1/6 cup sesame seeds
½ onion
2 ¼ kg lamb chops
Asian Pear Salad
Asian pears, quartered
Pickling brine (see below)
Other salad ingredients:
Cilantro
Italian parsley
Oranges segments, juice and zest
Lemon segments, juice and zest
Limes segments, juice and zest
Grapefruit segments, juice and zest
Extra virgin olive oil
Sea Salt
Black Pepper
Garlic
Pickling Brine:
8 cups water
4 cups rice wine vinegar
2 1/2 cups sugar
2 tbsp sea salt
½ tsp fennel seed
½ tsp star anise
½ tsp juniper berries
½ tsp peppercorns
½ tsp coriander seed
½ tsp cloves
½ cinnamon stick
1 ½ bay leaves
½ handful garlic
Method
Beachside Tacos
Make soy garlic by boiling all ingredients, then reduce heat to simmer for 1-2 hours. Chill, strain then mix into tuna mixture to just coat.
For salsa verde, cook garlic in the oil in a pot on low heat till brown, stirring constantly. Roast onions in pan till almost black. Cool garlic, oil and onions. Once cool, puree with all other ingredients.
To assemble, place tuna mixture inside lettuce leaves and sesame leaves and top with salsa verde, fried shallots and sesame seeds.
LA County Lamb Chops
Lamb:
Puree all the marinade ingredients.
Marinate lamb chops for 2 hours and grill. Serve with Asian Pear salad.
Asian Pear Salad:
Prepare pickling brine by boiling then simmering all ingredients for an hour.
Chill then pour over Asian pears and pickle for 1 day.
Use as much as you like of the other salad ingredients. Mix together with the pickled Asian pear and serve as a light salad beside lamb chops.
