Ingredients

Serves 6

Juice of 1 orange
Juice of 2 lemons
4 tbsp sugar
⅓ vanilla pod, cut open lengthwise
6 just ripe nectarines
200 g blueberries
6 scoops of liquorice ice-cream
200 ml cream, whipped
6 long biscuits for garnishing

 

Method

This is a refreshing fruity dessert. Make sure the nectarines are just ripe. The liquorice ice-cream can be replaced with vanilla ice-cream or a fruity gelato of your choice. It’s nice to serve the dessert in a tall glass or parfait coupe.

 

Place the orange juice, lemon juice, sugar and vanilla pod in a wide saucepan and bring to a simmer.

Wash the nectarines. Cut each into 6 segments and add to the juice. Stir gently, cover with a lid and cook until the nectarines are soft (about 5 minutes). Transfer to a bowl to cool.

Place the blueberries in a small saucepan. Add ½ cup of the nectarine cooking juice, bring to a simmer and cook for about 5 minutes. Transfer to a bowl and leave to cool.

Place 6 tall glasses in the freezer to cool for at least 5 minutes.

Place a scoop of liquorice ice-cream in each glass. Top with a little cream then add 6 quarters of nectarine to each. Top with a bit more cream and spoon the blueberry sauce on top. 

Garnish with a biscuit and serve.
